Lemon Merengue cooktail: Long Island Iced Tea, Cooktail style!

Preparation :

Cocktail

Combine the vodka, gin, rum, tequila, Grand Marnier® liqueur and lemon juice in a shaker with 4 or 5 ice cubes.            
Shake and pour into glasses. Top up with Coca-cola or Pepsi and keep chilled.

Lemon mousse

Finely slice the zest of the lemon and lime and squeeze the juice.
Beat the 4 egg yolks with the sugar until thick and creamy. Stir in the mascarpone to combine.
Add the lemon and lime juice along with the Grand Marnier®.
Stiffly beat the 4 egg whites with the pinch of salt.
Gently fold into the mascarpone mixture and place in the refrigerator.

Meringue

Stiffly beat the egg whites with the salt.
Gradually fold in the sugar, Grand Marnier® and food colouring.
Using a large spoon or a pastry bag and tip, form the meringues on a baking sheet lined with parchment paper.
Sprinkle with slivered almonds.
Bake at 110°C (225°F) for 70 to 75 min.

Assembly:

Cut the biscuits in two, dip in the cocktail mixture and place at the bottom of each glass.
Divide the lemon mousse between the glasses and top with a meringue. Affix one lemon slice to six of the toothpicks and one lime slice to the remaining six. Place one toothpick of each “colour” into the glass to garnish.
Finally, pour the cocktail mixture into each glass and serve immediately.

  • 100 ml (3½ oz) vodka
  • 100 ml (3½ oz) gin
  • 100 ml (3½ oz) white rum
  • 150 ml (5 oz) GRAND MARNIER®
  • 100 ml (3½ oz) tequila
  • 100 ml (3½ oz) lemon juice
  • ~ 300 ml (10 oz) (or more according to your taste) Pepsi or Coca-Cola
  • Ice cubes
  • 250 g (8 oz) mascarpone
  • 2 eggs
  • 1 lemon
  • 1 lime
  • 100 g (½ cup) sugar
  • 50 ml (1½ oz) GRAND MARNIER®
  • 4 egg whites
  • a pinch of salt
  • 15 ml (1 Tbsp) GRAND MARNIER®
  • 150 g (1¼ cups) icing sugar
  • Slivered almonds
  • Green food colouring
  • 6 lemon slices
  • 6 lime slices
  • 12 wooden toothpicks
  • 6 ladyfinger biscuits
